Our reputation for excellence is based primarily on the quality of our beef . It all begins with our incredibly flavorful USDA Prime steaks. We know that each one carries our reputation with it and thus constantly work to make sure each one you receive is the best you've ever eaten. We care about more than just steak, however. From our burgers and hot dogs to briskets and ground beef, Mister Brisket is committed to providing you with the best.
BEEF BURGERS
Sold by the dozen, our fabulous 1/3 pound patties are made from a mix of lean sirloin and tenderloin trimmings.
HOT DOGS
The worlds greatest all beef hot dog. We offer them in a variety of sizes but recommend the ones that come four to a pound.
GROUND BEEF
We use lean chuck sirloin with just enough fat to ensure that the beef is flavorful. Sold in one pound increments, our blend is perfect for burgers, meat sauce or meat loaf.
EXTRA LEAN GROUND BEEF
Made solely from sirloin, our lean ground beef contains less than 10 percent fat (and can be made fat free if needed). A bit dryer than our regular blend, it is still flavorful and a good choice for those watching calories or cholesterol.
WHOLE BEEF TENDERLOIN
Our USDA Prime beef tenderloins are tasty, tender and simple to prepare. Typically weighing around six pounds, each serves up to eight people. All tenderloins are neatly trimmed and tied with butchers twine so that when they arrive, theyre oven ready. In addition, the tenderloin trimmings are leaned out and ground so that you receive a pound of lean delicious ground beef tenderloin with each order. Tenderloins may be split in half, divided into thirds or subdivided even further to suit your dining needs. Probably our most popular dinner party item.
BEEF TENDERLOIN FILETS
Whether you call them filets, filet mignon or tenderloin steaks, all are appropriate names for the individual portions that we cut out of whole beef tenderloin. Filets may be cut any size from our restaurant portion (12-14 ounce) to 4 ounce sandwich size pieces. We sell filets only by the whole tenderloin, not individually.
STRIP STEAKS
A premier cut among steak aficionados, we purvey only USDA Prime strip steaks. Prized for both their tenderness and flavor, we cut our strips to suit your preference. For best deal on price, purchase an entire strip loin (weighing typically about 14 pounds) and have us cut it to your specifications. A whole loin cut standard size (1 _ inch) will yield at least ten thick steaks.
STRIP ROAST
The same strip loin from which we cut our steaks, but prepared as a roast. Eats like a rib roast only boneless. A whole strip comfortably feeds 10-12 people.
RIB STEAKS
If you like a steak with a bone, then this is your choice. Arguably the most flavorful cut of beef, a thick USDA Prime rib steak smothered in garlic and properly grilled is a sublime eating experience. For the best price, have us take a whole rib (containing seven bones and weighing typically about 15 pounds) and cut it up into individual slabs. An entire rib typically yields about a dozen thick steaks.
RIB ROAST
The same USDA Prime seven-bone rib left whole or cut into 3 or 4 bone increments. Slowly roasted Prime Rib is a Christmas favorite and truly the king of roasts.
DELMONICO STEAKS (Ribeyes)
A boneless rib steak. Also known as a "ribeye", it offers the flavor of the rib with "no bones about it."
DELMONICO ROAST
A boneless rib roast which typically weighs around twelve pounds. Tasty, tender and slightly more expensive than a bone-in roast.
BRISKET
A whole brisket typically weighs seven to nine pounds and is easily prepared by covering in a roasting pan, adding some liquid, and cooking until "fork tender". Figure a pound per person when it comes to brisket, as there is much waste and shrinkage throughout the cooking process. Brisket is a delightful and versatile roast, which can be used to make everything from chili to barbecued beef.
FIRST CUT BRISKET (Flat Section Brisket)
A first cut is the smaller, leaner portion (also known as the flat section ) of the brisket. First cut is ideal when youre preparing brisket for a small group (six or less) or lacking time to cook a whole brisket. A typical first cut weighs around four pounds and feeds six.
CORNED BEEF
Take a raw beef brisket, cure it in a pickle brine, and you have a corned beef. Arguably the most popular of all deli items, good corned beef is slowly simmered in hot water, sliced thin and served on rye bread with mustard. Our raw corned beefs usually weigh 8-10 pounds and comfortably serve up to 10 people.
FLANK STEAK (London Broil)
The preferred cut for "London broil", flank is a lean, oval, boneless steak which has excellent flavor and versatility. Flanks can be used for stir-fry, sandwiches or as a respectable main course alongside garlic mashed potatoes and green beans. Typically weighing around 1 _ lbs., a good size flank can feed a family of four.
SKIRT STEAK (Rumanian Tenderloin)
Long, boneless, and shaped like a belt, a whole skirt (also known as "Rumanian Tenderloin") usually weighs around one pound and comfortably feeds two adults. Skirts bear a lot of similarity to flanks due to their versatility but have more natural flavor due to their heavier marbling. Skirts are terrific when smothered with garlic and grilled but may also be used for sandwiches, in salads or as stir-fry.
TRI-TIPS (Top Block or Newport Steaks)
A tri-tip is a roughly two pound piece of sirloin prized for its taste and versatility. It makes a simple, delicious roast or an alternative to flank for use as London Broil. We sell them individually and figure each will feed up to five people.
SIRLOIN ROAST
These boneless roasts, weighing 3-6 pounds, are lean, tender and absolutely wonderful. A wintertime winner, sirloin roasts make great, rare roast beef and are simple to prepare.
TOP ROUND ROAST
Another excellent piece of lean, tasty meat, top round is prized for roasting and frequently served as a buffet item. The biggest difference between a sirloin roast and top round is that top round roasts tend to be larger and are less expensive than sirloin. Easy to prepare and excellent for sandwiches.
BEEF STEW MEAT
We take lean, tender sirloin (unless you specify another cut) and hand cut it into suitable chunks for a delicious beef stew. Sold by the pound, ours is never tough or stringy. A cold weather favorite.
BREAKFAST STEAKS
We thinly slice pieces of ribeye or strip so that they quickly pan fry to perfection. These steaks are perfect alongside hash browns and eggs with a deep cup of black coffee. Also great for hot subs.
BEEF SHORT RIBS (Flanken)
A staple of soul food and Jewish cooking, short ribs are great for stews, soups or traditional dishes such as "cholent". Sold by the pound, beef short ribs are very flavorful. The first item Mister Brisket ever sold.
