Our philosophy is to try to sell fish in season rather than simply sell all things all the time. For that reason it is difficult for us to list exactly what we always sell. Rather, we offer below a list of products generally in stock but ask you to keep in mind that we do have access to other great seafood items on a seasonal basis. As always, we place paramount importance on selling seafood that meets our standards for both quality and freshness.
SALMON
Mister Brisket carries large filetstypically around four poundswhich come from locales as diverse as the Bay of Fundi in Canada to the Copper River in Alaska. We always attempt to carry salmon which is wild rather than farm raised as wild salmon generally tastes better. Prices vary greatly depending upon time of year. For example, Alaskan King Salmon, which is available usually from June to August is considerably more expensive than most other varieties. Regardless, you can be sure that any salmon bought from Mister Brisket will meet our standards for both freshness and quality.
Mister Brisket salmon filets will be boneless and can be cut into portion sizes of your choosing. All are wrapped for freezing and keep very well (salmon contains more fat than most fish and therefore keeps better in your freezer). We can also provide you with salmon steaks (bone-in) or whole salmon for poaching if you prefer.
TUNA
Mister Brisket carries only sashimi grade tuna (ideal for sushi) which is the highest quality available. Pieces can be cut any size and are sold by the individual steak.
SWORDFISH
We sell swordfish by the steak. Its a delicious, meaty fish which grills beautifully.
HALIBUT FILETS
We sell fresh and frozen halibut filets. Very lean and delicious with lemon and butter.
SNAPPER FILETS
Snapper is delightful but requires a delicate touch in the kitchen. Depending upon the season, we sell varieties ranging from the popular red to yellow tail to mango.
CHILEAN SEA BASS FILETS
A very popular item, we sell sea bass during times of availability.
GROUPER
True grouper comes from the Philippines and is sweet and meaty. Again, we sell it when it is available.
SHRIMPRAW, PEELED AND DEVEINED
We sell two sizes of fabulous Thai shrimp. Our jumbo shrimp come eight to a pound and are sold frozen in one pound packages. They are outstanding as an entrée and may be boiled or grilled with equal ease. We also sell smaller shrimp in two pound bags that come around 15 to a pound. These shrimp, which are also frozen, are ideal for cocktail appetizers or luncheons.
Mister Brisket never carries frozen, pre-cooked shrimp as they are mushy and tasteless.
SHELL ON SHRIMP
We carry fresh shell on shrimp (which have the added bonus of having never been treated with preservatives) during the summer months which are ideal for marinating and grilling. This Italian style preparation works perfectly with these delectable shrimp which we sell by the skewer (around six shrimp on each one with two skewers making a perfect entrée size portion).
LOBSTER TAILS
There are two types to choose from, warm or cold water, as well as a variety of sizes. Generally speaking, cold water are more flavorful and therefore substantially more expensive than warm water tails. Lobster tails may be as small as 6 oz but we also carry the much larger one pound and up varieties. Since theyre usually sold frozen, its best to have us defrost them for you so that we can split open the shell and pull out the meat.
FRESH LOBSTERS
We will gladly obtain fresh lobsters for your gathering and deliver them to your door. Timing is important, however, as they must arrive to you still alive, so make sure to give us plenty of advance notice.
Incidentally, lobsters are best between November and February.
